I would like to share my impressions from taking a three-day course of making koji. I specifically came from Russia to take this course and get a certificate, as I have been producing fermented products for 3 years and working with koji for a year now, so I wanted to deepen my knowledge and gain experience from someone who has it in his blood. I love Japan and everything about it, I love fermentation and am grateful for the opportunity to be trained. Hiromi is a true professional, she is very knowledgeable. She was prepared for the class in a way you would not expect. So many materials, so many products, so much knowledge. We made koji and then cooked with the resulting products. It was very interesting and exciting. We made onigiri, sushi, miso soup, it's great that the training includes that as well. I highly recommend everyone to take this course, Hiromi is amazing!
I highly recommend these cooking classes and fermentation courses when you travel to Japan. Hiromi is an incredible teacher and mentor and is passionate about education. I learned more than I expected and developed a deeper love for fermentation after learning traditional Japanese fermentation methods and have so much inspiration for preparing new dishes for my family and clients. As a nutrition coach I highly recommend learning about fermentation as it’s incredible for gut health, hormonal balance, and your overall health. It’s the best gift you can share with your family and loved ones.
