First TakeI stumbled upon this hidden treasure while walking around Tenjin searching for some traditional Fukuoka cuisine. At first, its seemingly inconspicuous location nearby a parking lot building threw me off and I thought the shop was closed. However, after peaking though the window, I decided to enter and I was greeted in Japanese by the owner chef, a generous, friendly man. The ambience was top notch; very clean and relaxing with nice calm piano jazz playing in the background.I started with a sashimi platter, and was delighted with wonderful presentation, like a scenic piece of art. The chef was very attentive to detail and carefully placed each dish before me, explaining the ingredients. I wanted more so I asked for the next masterpiece; he served me a peach and shrimp "cocktail" with tofu sauce. It was a strange combination, but surprisingly refreshing. We talked about my background and travels, and I learned that he used to be a DJ and only started training as a chef at age 40 (what a life!) I finished with a light seafood, tomato agar cocktail, highlighting seasonal ingredients. I was so impressed and wanted to try more, so I decided to book a course dinner, which you have to ask for at least a day before.Round Two (spoiler alert for the course contents)I went back the next night after a long day remote working, and instantly felt at peace. The owner graciously greeted me again and started me off with some delightful Shochu (rice based, often only found in the Kyushu region.)This time another cocktail masterpiece was presented; torched bluefin tuna with an okura sauce. Very interesting combination of textures that offset each other, as okura tends to feel slimy. The pickled shallot also added a nice accent.Next was something I never tried before, but essentially a dashi tea that you drink at first, and eat the contents after. The conger pike was so soft, it melted in my mouth instantly like butter. Nothing had a fishy taste to it; simply mouthwatering.A sashimi plate came after, with cuts off seasonal fish and the chef's own soy sauce mix. Then, baked fish with fig, which tasted very wholesome and warmed me from the inside out. It was like a cross between a sweet potato and grilled fish. After that came the duck, which had no gamey taste and was well complimented by the assorted vegetables. I was also offered some rice with ground chicken and miso sauce, which was a rare white miso. Finally we finished with a home made Japanese pumpkin pudding (which I found to be similar to a creme brulee.) The taste was exquisite and very rich, and just the right consistency to bite into and melt in your tongue.I was very pleased with the course option and felt I really got my bang for the buck (コスパいい!). Trust me, it's not everyday you can find an authentic Japanese cuisine restaurant like this. This restaurant experience made my trip to Fukuoka very special, as I got the chance to taste the essence of traditional Japanese cuisine. Michelin level if I daresay myself.
